10 oz Rotel with green chilies, (mild) drained and discard liquid
1 lb turkey sausage, browned and broken
3 green onions, sliced thin
8 oz Monterrey Jack, grated
3/4 cup whole milk
1/2 tsp cilantro or sweet basil
1/8 tsp black pepper
1/2 tsp garlic salt
Cut up sausage and cook in skillet; lightly saute green onion. Drain and set aside.
Spray baking dish with Pam™. Layer half of the tortilla strips, tomatoes/green chilies, sausage and cheese. Repeat with other half. Beat the eggs, milk and spices and pour over the layers in the dish. Cover and refrigerate overnight.
In the morning, preheat oven to 350°.
Bake for about 40-45 minutes (9x13) until bubbling around the edges. Let stand 5 minutes or until the center is solid.
Garnish with sliced tomatoes and serve with salsa and sour cream.
