Crockpot Hearty Breakfast

Make ahead the night before so breakfast is ready in the morning!

Ingredients

  • 1 dozen eggs
  • 32 oz bag frozen O'Brien hashbrown
  • 1 lb cooked & cut up bacon, ham or sausage
  • 1/2 C diced onion
  • 3/4 lb shredded cheddar cheese
  • 1 C milk
  • 1 C sour cream
  • 1/2 tsp dry mustard
  • Salt, pepper and garlic powder

Instructions

  1. Spray 6 quart crock pot with nonstick spray.
  2. Put ½ of the hashbrowns, meat, and onion mixture. Sprinkle on half the cheese. Repeat
  3. Combine eggs, milk, sour cream and seasonings. Pour this mixture over the top of ingredients in crock pot.
  4. Cook on low for eight hours.

Western Omelet Casserole

Ingredients

  • 32 oz bag frozen hash brown potatoes
  • 1 lb cooked sausage or cubed ham
  • 1 medium onion, diced
  • 1 1/2 cup shredded cheese
  • 1 dozen eggs

Instructions

  1. Layer one third each of frozen potatoes, meat, onions, and cheese in bottom of slow cooker.
  2. Repeat twice.
  3. Beat together eggs, milk, salt, and pepper.
  4. Pour over mixture in slow cooker.
  5. Cover.
  6. Cook on low 8 hours

A Dozen Delicious Waffle Variations

Ingredients

  • 3 cups sifted all-purpose flour (or part whole wheat flour)
  • 4 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 egg yolks, beaten
  • 4 egg whites beaten until stiff
  • 1 1/2 to 2 cups sweet milk or buttermilk
  • 4 tablespoons melted butter

Instructions

  1. Sift dry ingredients together.
  2. Beat egg yolks until light and add the milk and melted butter.
  3. Combine wet and dry ingredients.
  4. Fold in beaten egg whites.
  5. Bake in a hot waffle iron.
  6. Makes about a dozen waffles.
  7. Tips:
  8. Put the waffle batter into a pitcher. It is much easer to pour the batter!
  9. Don't overfill waffle compartments or the batter runs out on the sides of the waffle iron.
  10. Waffles are done when there is no more steam rising from the iron.
  11. After cooling, freeze extra waffles in a plastic freezer bag. Separate with wax paper before freezing.
  12. Variations:
  13. Apple Waffles - Add a teaspoon of cinnamon to the dry ingredients. Add a cup of chopped, peeled apple to batter. Serve with warm applesauce & sour cream.
  14. Bacon Waffles - Crumble a few slices of cooked, drained & crumbled bacon into the batter.
  15. Banana Waffles - Add a chopped banana to the batter.
  16. Blueberry Waffles - Add 1-cup fresh or frozen blueberries (thawed & drained).
  17. Chocolate Waffles - Increase sugar to 1/3 cup and add 1 square melted unsweetened chocolate OR add 1/2-cup cocoa and a 1/3-cup sugar to dry ingredients. Serve with whipped cream and chopped pecans.
  18. Cinnamon Raisin Waffles - Add a teaspoon cinnamon and a couple spoonfuls of plumped raisins to the batter.
  19. Ham Waffles - Add a couple of spoonfuls of diced ham to the batter. Sauté it first for better flavor.
  20. Molasses Spice Waffles - Add a teaspoon of cinnamon and a 1/2-teaspoon of nutmeg to dry ingredients. Add 3 tablespoons of molasses to liquid ingredients.
  21. Nutty Waffles - Add 1/4 cup chopped peanuts, pecans, walnuts or filberts. Toast the nuts for better flavor!
  22. Orange Zest Waffles - Add a tablespoon orange zest to batter. Substitute 1/2 cup orange juice for 1/2-cup milk.
  23. Pineapple Waffles - Add a cup of well-drained crushed pineapple to the batter.
  24. Sausage Waffles - Add a couple of spoonfuls of cooked, crumbled and drained sausage to the batter.

Breakfast Tortilla Casserole – Make Ahead

We made it today for brunch; it's really good!

Ingredients

  • 8 corn tortillas, cut into strips
  • 10 oz Rotel with green chilies, (mild) drained and discard liquid
  • 1 lb turkey sausage, browned and broken
  • 3 green onions, sliced thin
  • 8 oz Monterrey Jack, grated
  • 10 eggs
  • 3/4 cup whole milk
  • 1/2 tsp cilantro or sweet basil
  • 1/8 tsp black pepper
  • 1/2 tsp garlic salt

Instructions

  1. Cut up sausage and cook in skillet; lightly saute green onion. Drain and set aside.
  2. Spray baking dish with Pam™. Layer half of the tortilla strips, tomatoes/green chilies, sausage and cheese. Repeat with other half. Beat the eggs, milk and spices and pour over the layers in the dish. Cover and refrigerate overnight.
  3. In the morning, preheat oven to 350°.
  4. Bake for about 40-45 minutes (9x13) until bubbling around the edges. Let stand 5 minutes or until the center is solid.
  5. Garnish with sliced tomatoes and serve with salsa and sour cream.
