Joli’s Wheat Buns
Breadmaking is part recipe and part technique; the more you practice, the better your bread will be!
This is the original recipe from my friend, Joli. I only made a couple of changes–I use white whole wheat (might also be called Spring Wheat), salted butter (not shortening), and about 1/2 tsp salt because of the salt in the butter.
I make these buns often and they are super-delicious!!
1 cup water
3 cups white whole wheat flour
3/4 tsp salt
1/4 cup softened butter
1/4 cup sugar
1 tablespoon instant active dry yeast
Put all ingredients in my automatic bread machine in order and set for the dough cycle. My machine takes 1 hour and 50 minutes.
Prepare a large baking pan by lining it with parchment paper. Brush a little olive oil on the parchment paper.
Cut the dough in 8 pieces for hamburger-size buns or 12 pieces for dinner roll-size buns and place them in the pan.
Cover and allow to rise for 15 minutes. Bake at 400F for 12-15 minutes.
When I make 12 smaller buns, they only need 8-10 minutes to bake.
- Lightly spoon the flour into the cup measure because too much flour will not work.
- You may need to add a tablespoon or so of water to dough when your machine is kneading.
- You want the dough to form a soft ball in the machine that cleans all the dough off the sides.
